Ingredients:  
Ingredients:  
2 cans of corn
Butter
1/4 of a block of creme cheese
Queso fresco or Parmesan cheese
2 tablespoons of mayonnaise
2 green onions, finely chopped
Cilantro to taste
hint of lime juice
Smoked paprika (I used Pork rub)
garlic powder
salt and pepper

Directions:
Directions:
Melt butter in cast iron
Add corn in a single layer in pan
roast for 10-15 min, stirring
outside of kernels will begin to brown, just don't burn!
Add salt/pepper
Add blocked creme cheese
stir until well blended


In a separate bowl
Mix:
Mayonnaise
Paprika/pork rub
Cheese
lime juice
salt/pepper
(add what you need for taste)

Scoop mixture by spoonful into pan with corn
Mix well
Add fresh cilantro and graded cheese to top for serving.
