1½ cups all purpose flour
1 tsp. baking soda
½ tsp. salt
1½ cups dark brown sugar
1 cup creamy peanut butter
2 large eggs
4 tbsp. melted unsalted butter, cooled
2 tbsp. honey
1 tbsp. vanilla
½ cup dry roasted peanuts, chopped fine
Directions:

Heat oven to 350ºF. Adjust oven rack to middle position. Line 2 large baking sheets with parchment paper. In a separate bowl mix flour, baking powder and salt together, In another bowl mix remaining ingredients till smooth and then blend in the flour mixture until soft dough forms. Mix in crushed peanuts. Scoop into 24 cookies. Gently flatten dough balls 10-12 minutes each tray turning in oven half way. Transfer to wire rack till cooled.
