3 cups water
3 chicken bouillon cubes
4 medium potatoes peeled and cubed
1 medium onion chopped
1 1/2 cups thinly sliced carrots
1/2 cup butter
1/2 cup flour
4 cups milk
3 cups grated cheddar cheese
1 tsp Tabasco sauce

Directions:
Directions:
Combine water and bouillon in a dutch oven and bring to a boil. Stir until dissolved. Add vegetables and bring to a a boil, cover, reduce heat and simmer for 12 minutes or until they are tender.

Melt butter in a 2 qrt saucepan and blend in flour. Gradually add milk and cook stirring until mixture comes come to a boil and thickens slightly. Add to pot with cheese and Tabasco. Stir until cheese melts but DO NOT BOIL.

This recipe can also be used for corn chowder - just use potatoes, onion and corn for the vegetables and do everything else the same.
