4 skinless boneless chicken breasts cut up
˝ onion chopped
1 large garlic clove minced
Herb of choice (thyme, basil, tarragon, curry, cumin etc)
2 cups wild rice blend (or any long grain rice, basmati, jasmine etc)
3 cups chicken broth
salt and pepper to taste
˝ cup Parmesan cheese (optional)

Directions:
Directions:
Spray inside of Instant Pot with cooking spray. Set to sauté and cook onion until soft. Add garlic and herbs for a minute. Add rice and liquid and put chicken on top.
Cook: high pressure for 6 minutes, quick release.
Stir and add cheese

Mexican version
Saute ˝ pepper chopped with onion. Add 1 Tbsp tomato paste, 2tsp cumin, 2tsp paprika with liquid. Use 2 cups mexican cheese instead of parmesan.
