1 pound brussels sprouts (or vegetables like broccoli or cauliflower)
1 lemon
4 T olive oil
Salt and pepper
½ tsp red pepper flakes
1 18 ounce package of fresh gnocchi
6 T butter
½ tsp honey
Parmesan cheese, for serving

Directions:
Directions:
Trim the vegetables. (If using Brussels Sprouts, cut in half). Using a vegetable peeler, peel thick strips of lemon zest, then coarsely chop, yielding about two teaspoons.

In a large skillet, heat 3 T olive oil over medium-high heat. Add the vegetables. If using brussels sprouts. Place cut side down. Scatter the lemon zest over the top and cook, undisturbed, 3-5 minutes or until well browned. Ad the red pepper flakes, stir and cook until vegetables are tender, 2- 3 minutes. Transfer to a bowl. In the same skillet, heat the remaining 1 T olive oil over medium-high heat. Add fresh gnocchi and cook, covered and undisturbed, until golden brown on one side, 2-4 minutes. Add the butter and honey. Season with salt and pepper and cook until butter is golden, nutty smelling and foaming, 1-2 minutes. Stir in vegetables until warmed through. Serve with grated parmesan
