2 lbs. Fish fillets (either flounder or talipia)
salt and pepper
¾ cup Parmesan cheese
½ cup coarse bread crumbs
4 Tbsp. butter, melted
2 Tbsp. olive oil

Directions:
Directions:
1. Preheat oven to 425ºF.

2. In a large baking dish, season the fish fillets with salt and pepper. Mix Parmesan, bread crumbs, melted butter, and olive oil.

3. Sprinkle Parmesan mixture over fillets.

4. Bake for 15 minutes, or until fish is cooked and topping is golden.

5. Let stand for 5 minutes before serving.
