1 1/2 Tbsp extra virgin olive oil, divided
2 pounds boneless, skinless chicken breasts, cubed

1 red bell pepper, chopped
3-4 jalapenos, chopped
1 (8 oz) package cream cheese, cubed
1/4 c mayonnaise
1 c shredded cheddar, divided
4 slices bacon, chopped

Directions:
Preheat oven to 400º. Grease an 8x8 baking dish with cooking spray. In a large skillet over medium-high heat, heat 1 tablespoon of oil. Season chicken with salt and pepper then cook until seared and no longer pink in the middle. Remove from pan and place on a plate.

In the same skillet, heat the remaining oil and cook bell pepper and jalapeno until soft, about 5 minutes. Add cream cheese, mayo, and chopped chicken, stirring until the cream cheese melts. Stir in 1/4 c cheddar and remove from heat.

Add chicken mixture to a prepared baking dish and top with remaining cheddar. Bake until cheese is melty and bubbly, 15-20 mins.

Meanwhile, in a medium skillet, cook bacon until crispy, about 8 minutes. Drain on a paper towel.

Garnish the casserole with cooked bacon pieces before serving.
