Preheat oven to 400º

1 1/4 c. flour
3/4 c. malt o meal, dry
1/2 c. sugar
1 T. baking powder
1/2 t. salt
3/4 c. milk
1/4 c. oil
1 egg
1 t. vanilla, optional

Combine dry ingredients. Combine wet ingredients and combine with dry ingredients only until just mixed. Fill muffin cups 3/4 full. I use an ice cream scoop.
