1/2 tsp oil
1 2/3 lbs chopped chicken
1 cup chopped carrots
1 cup chopped red bell peppers
1/2 cup diced yellow onion
1/2 tsp minced garlic
1/2 tsp fresh garlic or 1/8 tsp ground garlic
2 cups coconut milk
1/2 tbs brown sugar
1/3 cup curry paste
1 tbs fresh Basil sliced

Directions:
Directions:
Pour oil into pan and cook up chicken pieces,
Add onions, ginger, garlic and cook for approx. 1 minute or till aromatic.
Add carrots and cook stirring for approx. 2 minutes.
Add red pepper and cook for 1 minute
Add coconut milk and brown sugar.
Add basil
Stir, bring to a boil and then simmer until veggies are tender (but not mushy).

Serve with Rice
