Stuffed Peppers Recipe

½ cup uncooked rice
4 large red bell peppers
1 lb lean ground beef
1 medium yellow onion, diced
1 medium green bell pepper, diced
2 Tbsp tomato paste
2 cloves garlic, minced
2 tsp Italian seasoning
1 – 15 oz can diced tomatoes
Salt & Pepper, to taste
1 cup Monterey jack, shredded

Preheat oven to 400º. In small saucepan, prepare rice according to pkg instructions.

Grease a 9×13" baking dish. Slice the bell peppers in half, from top to bottom down, through the stem. Deseed the peppers then arrange them, cut side up, in the prepared baking dish. Set aside.

Heat large skillet over medium heat, add ground beef; cook until no longer pink. Drain any excess fat. Add onion & diced pepper, cook until onion softens.

Add tomato paste, garlic, and Italian seasoning, then stir to combine.

Stir in tomatoes & cooked rice, season to taste. Let simmer until liquid has reduced slightly, about 5 min.

Spoon the beef and rice mixture into the pepper halves, and top with Monterey Jack. The peppers should be over-filled.

Cover your baking dish with foil, and bake until the peppers are tender, about 35 min. Uncover and bake for 5 min, the cheese should be bubbly.
