2 cups whole blanched almonds
1 cup granulated sugar
1 large egg
zest of 2 lemons

Directions:
Directions:
Using a food processor grind 2 cups of almonds. Add 3/4 cup sugar, the egg, and lemon zest and pulse to form dough. Transfer to medium bowl , cover and refrigerate for at least 12 hours.
Preheat over to 350 degrees. Line baking sheet with parchment paper. Put remaining sugar in a small bowl
Roll dough into small balls and then roll in sugar. Press an almond into the top of each cookie so that point still up and 1/2 the almond is visible
Bake cookies 8-10 minutes
