2 onions, chopped
1 lb. fresh mushrooms, coarsely chopped
4 tablespoons vegetable oil
4 (10o oz. each) packages frozen chopped spinach, defrosted and drained
8 carrots, peeled and grated
8 eggs, lightly beaten
1 teaspoon salt
½ teaspoon black pepper
4 tablespoons Passover chicken soup mix
1 cup matzoh meal

1. Preheat oven 350º.
2. Use 3 greased muffin tins (12 each) or 9 x 13" baking dish.
3. In a skillet, sauté onions and mushrooms in oil. Set aside.
4. To the eggs, add the spinach, carrots, salt, pepper, soup mix and matzoh meal, thoroughly after each addition.
5. Add mushrooms and onions.
6. Put mixture into muffin tins and bake for 45 minutes.
7. Serve warm.
