2 cups dry red lentils
15 oz can diced tomatoes
10 oz chopped frozen spinach, thawed and drained
4 cups vegetable broth
1 small onion, minced
1 tbsp fresh ginger root, minced
1 tbsp minced garlic
1 tbsp curry powder
1 tsp mustard seed
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp cayenne pepper
1 tbsp kosher salt
1 tsp sugar
1 tsp fresh lemon (or lime) juice
1 bunch chopped cilantro

Directions:
Directions:
Combine all ingredients except lemon juice and cilantro in a slow cooker.
Cook until thick and creamy and lentils are soft, about 3 hours on high or 6 hours on low.
Season to taste with more salt and pepper.
Garnish with lemon juice and cilantro to serve.
