1 t olive oil
2T tomato paste
1/3 c aged balsamic vinegar
1/4 cup white vinegar
3 T honey
1 filet or 1 oz anchovy filet mashed
1/4 c finely chopped green onions
2 cloves minced garlic
1 T minced fresh rosemary
1 T kosher salt (to taste)
1 t ground black pepper
1 t red pepper flakes
3 1/2 pounds boneless pork shoulder

1. preheat oven to 325 degrees. brush a baking dish with olive oil.
2. Whisk tomato paste and all other ingredients except meat together
3. Cut pork shoulder into roughly 3 inch pieces.
4. Put meat in baking dish. toss with mixture from 2.
5. Bake in preheated oven flipping pieces over halfway through until pork is very tender 2 1/2 to 3 hours. Add a splash of water if pork appears too dry. Skim off fat as desired.

I first made this to take to cabin on Lake Occoneechee with Mary and James in March 2023. I use the dump and pour method and didn't measure too accurately.
