1 pie crust, (1 frozen crust)
½ lb thin strips of bacon, chopped
½ yellow onion, diced
1 cup shredded cheese, (sharp white cheddar, but gruyere is classic)
1¾ cup half and half
4 eggs, large
½ tsp kosher salt, ¼ tsp black pepper
¼ tsp smoked paprika
⅛ tsp ground nutmeg

For brushing the inside of the tart
1 egg white

Prepare Pie Crust: Prepare the homemade pie crust and chill, or use store-bought pie crust. Preheat oven to 350˚ with rack in middle.
Pre-Bake Crust: If using a store-bought crust, follow package instructions for pre-baking.

Make Savory Egg Filling: While pie is pre-baking, preheat large skillet over medium heat; add chopped bacon. Cook, stirring often until fat is rendered and bacon is crisp. Remove bacon with slotted spoon to separate dish. Add diced onions to bacon fat; cook stirring often until onions are golden. Remove with slotted spoon to dish with bacon. In large bowl whisk 4 eggs, add 1¾ cups half and half, salt, pepper, paprika & nutmeg; whisk together to incorporate a little bit of air into custard. Stir in cheese, prepared bacon & onion then pour filling into prebaked crust.

Bake Quiche Lorraine: Bake in preheated 350˚ oven for 50 min. The quiche will continue cooking after it is removed from oven. Cool slightly before serving; garnish with parsley if desired.
