Blueberry Ricotta Squares Recipe

1 cup flour
3/4 cup sugar
1 1/4 tsp. baking powder
1/4 tsp. salt
1/3 cup milk
1/4 cup shortening
1 egg
1/2 tsp. vanilla
1 1/2 cup blueberries
2 eggs
1 1/4 cup ricotta cheese
1/3 cup sugar
1/4 tsp. vanilla

Directions:
Directions:
Combine dry ingredients. In a separate bowl, cream shortening and add 1 egg and vanilla. Gradually add dry ingredients alternating with milk. Pour batter into a greased 9" x 9" pan. Sprinkle blueberries over batter. In a medium bowl beat 2 eggs, ricotta cheese, 1/3 cup sugar, and 1/4 tsp. vanilla. Spoon over blueberries.

Bake at 350º for 55-60 minutes and check to be sure center is set.

After 60 minutes I reduced to 325º and cover for another 10 minutes until center set.

Cool and cut into 16 squares. Store in refrigerator.
