Notes: After it simmers for an hour or so, I taste and adjust seasonings. I find I often add more black pepper, vinegar or Worcestershire sauce.
The main ingredients are tomato sauce, beef and cabbage so those remain constant. However, I always check my fridge to see if I have veg nearing the end of shelf life. If I have 5 wimpy ribs of celery, they all go in. Same with carrots, tomatoes and onions. I made this today and will serve for dinner and I have an aging zucchini so I'll slice some zucchini and put in bowls and spoon soup over it. I don't add to soup while cooking as it gets too mushy for me.
