Ingredients: 2 tubs of Marscapone Cream 1 tub of plain philadelphia cream cheese 300 gr of digestive biscuits 100 grm Butter 150ml double cream Icing sugar Baileys half a glass Twirl bars x 2 crushed ( or malteser's crushed in a bag Any Chocolate for decoration or Bailey chocolates, or Ferero Roche

Directions:Put the digestive biscuits into a food processor and blitz till crumb like If no food processor stick into a food bag and bash with a rolling pin till crumbed.
melt the butter in a pan then pour it over the crumbs in a bowl. Then get a springform cake tin. Then line it with baking paper or some butter and press the digestives onto the base to form your bottom of the cheescake. Put into the freezer for 30 mins or longer in a fridge to set.
Into a large mixing bowl put the cream cheese, the marscapone tubs and the glass of Baileys.
Use some of the cream not all just to make sure it stays thick and creamy. Blitz these with a electric hand held mixer add about 6 tablespoons or more of the icing sugar to thicken it up .The consistency should be creamy and thick. I add chocolate or fruit at this stage. You can decide it is your cheescake to make.
You can also chop up chocolate twirl bits and add into the mix if you want a fruity cheescake add some vanilla extract 1 tablespoon and add fruit like Raspberries or Strawberries to the mixture. Save some for garnishing later.
Once the cheescake biscuit bottom has set fold the creamy mixture into the tin and decorate how you want. Ferero Rocher chocolates are lovely crushed into the cheescake and then used to decorate on the top.
Get the cheescake and place in the fridge for at least 24 hrs to set properly.
When ready to serve slice and release from the tin. |

Notes: This cheescake is a no bake cheescake and you can utilise the recipe for any fruit you want to use. instead of vanilla you could use a dash of concentrated lime juice and chocolate or even chocolate orange etc. Anything you fancy.
Makes a lovely creamy cheescake that you can eat any time of the year.
