Ingredients: 6 skinless boneless chicken breasts ( 1 1/2 lbs),cut into 1 inch pieces 2 medium Yukon gold potatoes, cut into 1 inch pieces..about 2 cups 2 cups baby cut carrots 1 cup sliced celery 2 -10 3/4 oz. oz cans cream of chicken soup (regular or fat free) 1 cup water 1 tsp thyme 1/4 tsp black pepper 2 cups biscuit mix 2/3 cup milk

Directions:Stir the chicken, potatoes, celery & carrots in a 6 quart slow cooker. Stir the soup, water, thyme and pepper in a medium bowl. Pour over chicken mixture. Cover and cook on low 7-8 hrs. Until chicken is thoroughly cooked! Stir the baking mix and milk in a medium bowl until well mixed. Drop batter by spoonful onto chicken mixture. INCREASE heat to HIGH! TILT LID To VENT!!!! Cook for 30 minutes or until dumplings are done in the center. Serve and enjoy! |

Notes: My mom used to make chicken and dumplings the old fashioned way as a special dinner on Sunday. Nothing can equal that delicious meal but this one is a good contender and much easier.
