5 boneless, skinless chicken breasts, sliced into thin cutlets

1 and 1/2 cups of chicken stock (360ml)

1 cup of heavy cream (240ml)

3 cloves of garlic, sliced

1/3 cup of sun-dried tomatoes, diced (50g)

1 tbsp tomato puree

2 tablespoons of all-purpose flour (plain)

1 teaspoon of black pepper

1 teaspoon of oregano

1 teaspoon of paprika

1/2tsp chilli powder (optional)

salt to taste

Fresh basil, chopped, for garnish

Grated or shredded Parmesan cheese, for garnish

Sliced Cherry tomatoes for garnish

Directions:

1. In a small bowl, whisk together the tomato puree and flour until smooth to create a paste.


2. In the slow cooker pot, add the chicken stock, flour tomato paste, heavy cream, black pepper, oregano, paprika, and chili powder. Whisk until well combined.

3. Stir in the sliced garlic and diced sun-dried tomatoes

4. Add the chicken breast cutlets to the slow cooker and submerge them in the sauce. (You can sear the chicken on the pan before adding to the crock pot but it is not necessary for a delicious dish)


5. Cover and cook on High setting for 3 hours or Low for 6 hours.


6. Once done, garnish with grated Parmesan cheese, chopped fresh basil, and sliced cherry tomatoes. Season to your taste.


7. Serve the chicken over pasta or with boiled potatoes, enjoy with some wine and your other half :)

Cooking Tips for Marry Me Chicken in Slow Cooker

Consider using boneless chicken thighs instead of breasts. Thighs are juicier and have more flavour than breasts, and they also hold up better to the longer cooking time in a slow cooker.

Use good quality meat for the best result. Look for chicken that is organic or free-range, and avoid chicken that has been injected with water or additives.
