Pie crust for 2 pies
Filling:
2 tbs butter
1 egg well beaten
Pinch salt
¾ cup sugar
½ cup milk
½ tsp vanilla
1 can coconut

Directions:
Directions:
Melt butter in saucepan.
Whisk in sugar and other ingredients.
Cut pie crusts into 4 inch rounds and fit into cupcake pans.
Put about one tsp filling into each patty.
Bake at 400º for about 10 minutes or until lightly browned

This is a very old recipe from our first neighbors in Bayside. They were the family that got our Mom to church, and eventually a Billy Graham crusade. We are all where we are today because of this family. I wanted this recipe to be remembered.
I used store bought pie crust but it would be great with homemade.

I don’t see canned coconut anymore so I used about 4 oz. (Bakers flaked)
Also I do not have a 4 in cookie cutter so I used my largest biscuit cutter (3 inch) which makes a small mini tartlet when placed in the cupcake pan.
They come out like tiny little pies and got demolished by bible study ladies. :)
