3 ripe banana-divided
¼ cup brown sugar
1 T. Lemon juice
3 c. Nilla wafers, finely crushed
¾ c. Butter, melted
4 -8oz cream cheese
1 c. Sugar
4 eggs
2 t.Vanilla-divided

Garnish
Whipped cream
Nilla wafer
Banana sliced

Directions:
Directions:
Mash 3 bananas with fork, place in small pot with brown sugar and lemon juice, heat stirring until sugar is dissolved, remove and add vanilla and let cool.
Preheat oven to 325º
Finely crush nilla wafers in food processor, place the 3 cups in small bowl, add butter mix until no longer dry then place 1 tablespoon into cupcake liners, press firmly.
In mixer add cream cheese and sugar, add 1 eggs at a time mix until creamy, add Banana mixture, using large scoop fill cupcake liners. Bake for 18 to 25 min. Place a pan with water in oven on bottom shelf for moisture.
