4-5 cups whole wheat flour (can use half whole wheat, half white)
1 TBS yeast
1 tsp sugar
3 TBS vital wheat gluten
1/4 cup warm water
1/4 cup honey
1/4 cup olive oil
1/2 TBS salt
2 cups of warm water

Directions:
Directions:
Combine yeast and sugar with 1/4 cup warm water. Let sit for 5-10 minutes. Combine flour, wheat gluten, and salt. In a separate bowl, combine honey and oil. Pour liquid ingredients to dry ingredients with a dough hook. Mix for 10 minutes until the dough pulls away from the sides and the dough feels springy, elastic, and somewhat sticky. Place in a greased bowl with greased saran wrap covering. Let it rise in a warm place for 1.5 hours or until double in size. Punch down the dough and roll into loaves, line side down. Let rise 30 minutes. Bake at 350 for 45 minutes.
