Zucchini, 1 medium, cut in half lengthwise (6.9oz)
Extra virgin olive oil, 2 tsp(s) (0.3oz)
Ground beef, extra lean, 3 oz(s) (3oz)
Tomato paste, ½ tbsp(s) (0.3oz)
Red bell pepper, chopped, ⅓ cup(s), or yellow if preferred (1.7oz)
Black pepper, 1 dash(es)
Cheddar cheese, reduced fat, shredded, 1 tbsp(s) (0.2oz)
Frozen berries, any type, ¾ cup(s) (5.2oz)
1% milk, 1 cup(s) (8.3fl oz)
Peanut butter, reduced sugar & salt, 1½ tsp(s) (0.3oz)

Preheat oven to 350°F. Line a baking sheet with parchment paper.

Using a spoon, gently scoop out some of the flesh from the zucchini halves onto a chopping board. Finely chop the flesh and set aside. Place the zucchini halves onto the baking sheet.

Heat the oil in a non-stick skillet over medium-high heat. Add the ground beef, tomato paste, chopped zucchini flesh, bell pepper and cook until meat is browned. Season with pepper.

Spoon the beef mixture into the zucchini halves. Sprinkle over the cheese and bake for 25 to 30 minutes until zucchini is tender and cheese is melted and golden brown.

Add the zucchini boats to a serving plate and enjoy.

DESSERT: Add the frozen berries, milk and peanut butter to a blender. Blend until smooth. Enjoy a berry nutty smoothie for dessert.
