1 lb Yukon gold potatoes
4 eggs
3/4 cup half-and-half
1 cup shredded Gruyere or Swiss cheese
1 cup finely chopped ham or sausage
1/4 cup chopped fresh chives

Directions:
Directions:
Preheat oven to 450º. Coat 12 muffin cups with nonstick cooking spray. Slice potatoes 1/16-inch thick. (You may need to use a mandoline slicer.) Place potatoes in a medium bowl. Microwave 1 minute until slightly softened. Toss potatoes slices with 2 tablespoons vegetable oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Place one slice on the bottom of each muffin cup. Overlap additional slices to extend 1" to 2" above the pan. Bake 15 minutes. Remove from oven and reduce oven temperature to 325º.

In a large bowl, whisk together eggs, half-and-half and 1/4 teaspoon pepper. Stir in cheese, ham and chives. Spoon mixture evenly into muffin cups. Bake until puffed and set, 17 to 20 minutes. Cool in muffin cups 10 minutes. Loosen bites and remove from pan. Garnish with additional chives.

Ok, I actually never made this but it looked so yummy in a magazine. It said the crispy potato edges will taste like potato chips.
