1-9 inch pie crust (deep dish is better)
1 T butter
½ c diced onion
4 eggs
1 c heavy cream (or half and half)
2 T Dijon mustard
1½ c cubed ham
1 c shredded mozzarella cheese
1 c shredded cheddar cheese
2 T fresh chopped parsley
¼ t salt
¼ t pepper

Directions:

1. Preheat oven to 375º.

2. In a pan on medium heat, melt butter. Once bubbling, add onions. Sautee until translucent and remove from heat/set aside, allowing to cool.

3. In a large bowl, whisk eggs for about 30-45 seconds or until beaten. Whisk in heavy whipping cream, and Dijon mustard.

4. Stir in ham, both cheeses, parsley, salt/pepper, and onions to egg mixture.

5. Pour egg mixture into pie crust. Bake on lower oven rack for 35-40 minutes, or until the quiche is set, and a knife comes out mostly clean.

I love this recipe and it's so simple. I don't always use onions--you can leave those out. I also use any mustard that I have. Stone ground mustard is good, too. For a change, I substitute all Swiss cheese. I almost never have fresh parsley, so I use dried. Since I try to watch my salt, I never add that.
