3 eggs
1 ¾ cups matzo meal
1 cup sugar
½ cup potato starch
1 cup oil
Raspberry jam
Juice and rind of one large lemon

Directions:
Directions:
Beat eggs until frothy. Add sugar slowly and continue beating. Slowly beat in oil, juice and rind. Blend in matzo meal and starch, beating all the while. Drop by teaspoons onto greased cookie sheet and place ½ teaspoon jam in each cookie.

Bake in 350º oven for 20 to 25 minutes. Remove immediately from pan and cool on rack.
