1 Can Crushed Tomatoes (Large)
½ Can Water
Veal Chop
½ Tsp. Basil
Salt and Oregano (to taste)

Put a little olive oil in a pan, enough to cover the bottom. Slice ¼ of an onion and add to oil and start to sauté. When it starts to sizzle add 2 or 3 sliced cloves of garlic. When they are lightly browned, add one large can of crushed tomatoes with ½ can of water. Let it come to a boil and lower the heat to simmer.
In the meantime, take the chop apart and trim all the fat off the meat, and cup the meat into 3-inch pieces. Put the meat and bones in with the tomatoes and let it come to a boil. Lower the heat to simmer and tilt the cover so the steam can come out. Stir occasionally and add more water if it gets too thick.
Add ½ teaspoon of basil, then add salt and oregano to taste. Keep cooking until the meat is done, it will be very tender. You can add peppers if you like, its delicious. There is enough sauce for 1 pound of pasta.
