Nonstick cooking spray
1 recipe homemade pastry
1 ½ cups shredded cheese (cheddar, Swiss or provolone)
1 T flour
¾ cup diced cooked ham
¼ cup chopped, roasted red sweet pepper
¼ cup sliced green onions
4 eggs, lightly beaten
1 ½ cups half and half or milk
¼ tsp black pepper

Coat a large sheet of foil with cooking spray. On a lightly floured surface, roll dough into a 14 x 11 inch oval. Transfer to foil. Ease foil and pastry into the liner of a 6 quart oval slow cooker. Fold down top edges of pastry to make an even crust that extends 1- 1 ½ inches up the sides. Coat a second piece of foil with cooking spray and fit, coated side down, onto crust (this helps hold up sides of pastry). Cover, cook on high 1 hour. Remove top foil.
In a medium bowl toss together cheese and flour. Spread over crust. Top with ham, roasted pepper and green onions. Add eggs, half and half or milk and black pepper. Combine well and pour over mixture in crust.
Cover and cook on high 3--3 ½ hours, or until a knife comes out clean, giving crockery liner a half-turn halfway through if possible. Sprinkle with remaining cheese. Cook 10 minutes longer. Turn off cooker. If possible, remove crockery from liner. Let stand uncovered, 15 minutes before serving.
