1¼ lbs fresh Chilean sea bass
3 Tbsp unsalted butter, melted, divided
2 tsp kosher salt, plus additional to taste
Freshly ground black pepper, to taste
1 cup all-purpose flour
1 cup vegetable oil, at room temp
8 ozs baby spinach leaves
Lemon wedges, for garnish

To start cooking, melt 3 Tbsp of butter in large skillet over medium heat.

Once butter starts to foam, carefully add fish filets skin-side down, leaving space around each piece so they don’t touch.

Season them generously with salt & pepper, then let them sit until golden brown, about 5 min.

While fish cooks, combine remaining Tbsp of butter and flour in another bowl.

Whisk well to mix thoroughly.

When everything is ready, pour oil in pan; bring mixture up to 350º.

Slowly lower the fish into hot oil without crowding them too much.

Cook for 7-9 min, turning once during process, until fish is fully cooked through.

Once the fish is done, remove it from the pan and set aside to cool slightly before slicing it into portions.

To finish the dish, toss the spinach leaves with lemon juice and seasonings.
