1 lb cod fillet or cod loin, cut in 8 pieces
1 cup panko bread crumbs
1 tsp garlic powder
1 tsp paprika
¾ tsp salt
½ tsp Italian herbs
2 eggs
1 tsp oil

Pat cod dry with paper towels; set aside. Crack eggs into pie pan; lightly beat them.
Put crumbs into another pie pan or shallow bowl; add paprika, salt, garlic powder, & Italian herbs. Stir the panko mixture to combine.

Preheat air fryer to 400° for 5 min.

Meanwhile, put one piece of cod in egg; then roll in bread crumbs pressing lightly to make sure crumbs adhere. Place on a plate or baking sheet.

Repeat with remaining pieces; discard any leftover eggs or crumbs.

When air fryer is done preheating use pastry brush; spread oil on basket of air fryer *OR* spritz lightly with oil. Place cod pieces in basket; then air fry 400° for 15 min.

Check after 10 min to see how they're looking, spritz with more oil as desired
