½ cup diced onions
8 large eggs in a medium bowl
½ cup of milk
¾ teaspoon salt
¼ teaspoon pepper.

Below are the additions to make the tamale filled ramekins.
Above ingredients makes 6 individual servings.

1 1/2 Tamale Store Chicken Green Chile tamales cut in fourths
1/2 cup shredded cheddar or 4 cheese Mexican
2 green onions with stems chopped fine or chives if you have them.

Green Chili Sauce from this book to put on top.

This is the basic recipe to make a skillet baked frittata.

1. preheat your oven to 350°F.

2. Heat 3 tablespoons of olive oil in a a 10" oven-safe skillet over medium-high heat. Add ½ cup diced onions. Cook, stirring occasionally, until softened, about 5 minutes.

3. Meanwhile, whisk 8 large eggs in a medium bowl with ½ cup of milk, ¾ teaspoon salt, and ¼ teaspoon pepper.

To customize, choose one of the additions by referring to the website

4. Pour the egg mixture and any additions into your skillet, stir, and cook just until edges start to pull away from the pan. This will take 5 to 7 minutes. Transfer skillet to oven and bake until set, 16 to 18 minutes. Then enjoy!


FOR INDIVIDUAL TAMALE FRITTATA'S

1. Butter the inside of 6 ramekins
2. Cut tamales in fourths and put 1 piece in each dish.
3. Mix the cheese into the egg mixture towards the end of the cooking in skillet. Stop the precooking so the mixture will still pour.

(this precooking till it just starts puling away will reduce the bake time needed and allow you to get a good bake and set before over browning the egg mixture in the oven)

4. Fill your 6 ramekins evenly with egg mixture.
5. Top with chives or sliced green onion
6. Bake at 350 for 18-20 minutes until set and just beginning to brown
7. To serve you should be able to pop them out of the ramekin and cover with green chile sauce.
