1 Bunch Andy Boy Broccoli Rabe
1 Lb. Italian Sausage (turkey, casings removed and cut into small pieces)
˝ Lb. sliced mushrooms
4 Eggs
2-3 Cloves Garlic Chopped
1 Cup Shredded Mozzarella Cheese
Optional: Crushed Red Pepper

Wash Andy Boy Broccoli Rabe and cut into 2-inch pieces. Blanch Broccoli Rabe in a large pot of salted boiling water for 1-2 minutes, then drain. In a large saucepan, cook sausage until done. Add mushrooms and garlic and sauté until lightly browned. Add blanched Broccoli Rabe to sauce, cook 1-2 minutes. Beat eggs and add to the sauce pan, cook over medium heat until done. Sprinkle with mozzarella cheese and crushed red pepper.

Makes 4 to 6 servings.
