2 c cooked rice
2 c raw broccoli, small pieces
8 oz can water chestnuts, chopped, optional
1/4 - 1/2 c green onion, chopped
1 t salt
1/2 t pepper
13.5 ounce or 2/3 can coconut milk, well shaken +
1/2 c cream cheese,
OR 3/4 lb. approx. 3 inches Velveeta, cubed
1 cup shredded cheddar cheese

Directions:
Directions:
Cook rice in water (by instruction). Add 2 c broccoli florets on top of the cooked rice to steam. Measure out 2 cups rice. In greased 9” pan put rice and broccoli.
Add all ingredients together (except shredded cheese) and mix well. Sprinkle with shredded cheese.
Bake at 400 degrees for 15-20 minutes or until hot and bubbly.
