2 pounds red tomatoes, cubed
2 large cucumbers, peeled, seeded and cubed
2 garlic cloves, mince one, leave other whole
1 red onion, chopped
1 cup chopped basil
5 T oil
3 T red wine vinegar
Loaf of Tuscan style bread

Directions:
Directions:
Grill one side of Tuscan bread. Rub with whole garlic clove, turn over and repeat for other side. Set aside. Put tomatoes in bowl with minced garlic. Layer onion and cucumbers over. Mix together oil and vinegar. Pour over vegetables and marinate one hour. Add basil. Break or chop bread into chunks. Add to salad. Mix and serve.
