Olive oil
2 leeks cleaned and sliced
2 cloves garlic, minced
4 small zucchini, diced
2 can chopped artichokes
Veg stock
Fresh thyme
Package of phyllo dough
¼ cup butter
Parmesan cheese

Directions:
Directions:
Pour olive oil in soup pot. Saute vegetables. Add vegetable stock and thyme. Preheat oven to 400 degrees. In the meantime, melt butter. Roll up 6 sheets of phyllo dough. Cut into ½ inch slices. Toss dough strips in melted butter and parmesan. Spread on ungreased baking sheet. Bake 10 minutes. Ladle out soup. Top bowls of soup with phyllo noodles and serve.
