½ cup finely diced carrots
½ cup finely diced celery
1 med. onion diced
(my family will only allow ½ the amount of carrots,celery and onion)
½ tsp. ground thyme
¼ tsp. tumeric
6 cups chicken broth
3 cups shredded rotisserie chicken

DUMPLINGS:

1½ cups flour
½ cup yellow corn meal
1 heaping Tbsp baking powder
1 tsp salt
2 cups half & half
2Tbsp flour

Directions:
Directions:
1. add diced carrots, celery and onions. Stir and cook 3-4 min. over med.-low heat. Stir in ground thyme and tumeric, then pour in chicken broth. Stir to combine. Add shredded chicken. Cover pot and simmer 20 min.
2. For dumplings, while the chicken is simmering, make the dough for the dumplings. Sift together1½ cups flour, cornmeal, baking powder and salt in bowl, then add 1½ cups half & half. Stirring gently to combine. Set aside
3. Mix together the remaining ½ cup half & half and 2 Tbsp flour, then add it to the pot and stir to combine.
4. Drop by Tbsp dough into simmering pot. Cover the pot and continue to simmer for 15 min. Check the seasonings: add salt if needed. Allow to sit 10 min. before serving. This allows it to cont. to thicken.
