1 ½ lb ground beef
½ large onion, diced
1 (24 oz) pizza sauce or spaghetti sauce
1 (7oz.) package pepperoni chopped
1 Tbsp minced garlic
1 Tbsp Italian seasoning
1 tsp salt
½ tsp black pepper

Cheese Layer
2 cups shredded mozzarella

Popover Top
3 large eggs, room temp.
1 ½ cup whole milk, room temp.
2 Tbsp olive oil
1½ cups flour
¾ tsp salt
⅓ cups shredded parmesan

1. Preheat 400º spray 9X13 glass dish
2. In large skillet brown beef, drain grease
3. Add onions, minced garlic and cook additional 2 min.
4. Add Italian Seasoning, salt, pepper and pepperoni. Stir well and cont. to cook 3-5 min.
5. Add sauce and simmer 3 min.
6. Add meat mixture to bottom of pan and spread out evenly. Top with shredded mozzarella.
7. Place in preheated oven while you combine the pop over mixture so that the baking dish is very hot when you pour the popover mixture into it so that it bubbles up when cooking.
8. In a separate medium mixing bowl combine flour, eggs, milk and oil and salt. Use a large spoon to mix together but make sure not to over mix.
9. Remove the baking dish from the oven and poor the popover top mixture over the meat mixture, making sure to get the top all the way to the edges of casserole dish. Sprinkle ⅓ cup shredded parmesan cheese over the top of the bubble up top and place back in oven.
10. Bake 30 min. or until crust is puffed up and is deep golden brown color.
DO NOT OPEN THE OVEN WHILE THIS IS BAKING! Doing so could cause the top to not bubble up correctly and collapse.
