5 small zucchini or 3 large ones
8 oz fresh mozzarella Try to use fresh if you can but shredded will work too
20 ounces of good quality marinara sauce homemade or a quality jarred sauce
3 tablespoon olive oil
11/2 cups of finely diced chicken
1 teaspoon kosher salt and pepper
¼ cup fresh grated Parmesan Cheese

Preheat oven to 350
1. Clean and wash your zucchini
2. Pre-heat a grill pan or a grill to medium heat. If you do not have either than pre-heat a large heavy bottom skillet
3.Cut your zucchini lengthwise into ½ inch strips
4.Drizzle the zucchini with olive oil.
5.Sprinkle the zucchini with salt and pepper
6.Once your grill or pan is ready, add your zucchini and cook for about 3 minutes per side.
7.Remove your zucchini from the pan and set aside
8. Add finely diced chicken to 16 oz of the marinara sauce and heat on the stovetop.
9. In an oven proof baking dish evenly spread the remaining 4 oz of Marinara sauce.
10.Next, Add your zucchini slices into the dish side by side but not overlapping. You may need 2 baking dishes if your zucchini are larger.
11.Now spread your chicken Marinara mixture over the Zucchine slices.
12.Now cut your mozzarella into thin strips and place over the zucchini (or cover the Zucchini with shredded Mozzarella)
13.Next, sprinkle your Mozzarella with the grated parmesan.
14Cover and place in the oven for 30 minutes.
15. Take it out of the oven and place under the broiler for 2-3 minutes to brown.
