3 to 4 bunches (2 ½ lbs total) of flat leaf spinach, trimmed and cleaned
2 tablespoons butter
1/2 medium white onion, minced
4 garlic cloves, minced
4 ounces of cream cheese, cut into pieces
1/2 cup milk
pinch ground nutmeg
coarse ground salt and pepper

1. Bring a large pot of salted water to a boil. Add spinach and cook until just wilted.

2. Drain in a colander and rinse with cold water until cool.

3. Squeeze spinach to remove as much liquid as possible. Chop coarsely and set aside.

4. In a large saucepan, heat butter over medium heat. Add minced onion and garlic, season with salt and pepper, and cook until onion softens (3-5 minutes).

5. Add cream cheese and milk, cook while stirring until cream cheese is melted and smooth.

6. Stir in spinach. Simmer over medium heat until the mixture thickens (8-10 minutes).

7. Add nutmeg, season to taste with additional salt & pepper.
