3 Gallons Chicken Broth
5 Pounds Cooked Chicken, Diced
5 Pounds Potatoes, Diced
Roasted and Chopped Green Chile (To your liking.)
2 Whole Onions, Diced
4 Tablespoons Garlic Powder
1 Tablespoon Black Pepper
2 Quarts Heavy Whipping Cream
4 Cups Shredded Cheddar Cheese
4 Cups Roux Mix

Directions:

In an 8 gallon sized stock pot, combine the chicken with the chile, broth, pepper and garlic and bring to a boil.

Reduce heat and simmer for 30 minutes, stirring regularly.

Add diced potatoes and cook for another 15 - 20 minutes. Stir in roux mixture and let simmer on low for 3 - 5 minutes, then slowly stir in the cheese and heavy cream

Bring the soup back up to temperature and serve.
