1 whole Beef Tenderloin (4 1/2 pounds). *Can be adjusted.* See Notes
3,Tbs. Olive Oil
4 tsp. kosher salt
2 tsp. coarsely ground black pepper

15-20 branches fresh tarragon OR (rosemary, sage & thyme) OPTIONAL

Preheat oven to 275. Place filet on a sheet pan and dry with paper towels.
Brush with olive oil and sprinkle with salt and pepper.
if using herbs, place on tenderloin (all around, tie with butcher string and brush with olive oil).
Roast 1 1/4 to 1 1/2 hours. Temperature 130-135 for medium rare.
Cover with foil and allow to rest for 20 minutes.
Remove herbs, if used, and slice.
