4 large eggs
1/2 melted butter
1 lemon sliced with rind, but remove seeds
1 1/4 c sugar
1 t vanilla
1 frozen pie shell
powdered sugar for garnish
Directions:
Directions:
Preheat ove to 350º. Place ingredients in a blender or food processer and pulse until mostly smooth. Pour into the frozen pie shell and bake 45 minutes or until set. Let cool completely, then dust with powdered sugar. Can also serve with Cool Whip or whipped cream.
