Ingredients: For the cream:
4 large egg yolks 1/2 c. sugar 3/4 c. heavy cream 1 c. Mascarpone (8 oz.)
Step 1. Using an electric mixer in a medium bowl, whip together egg yolks and 1/4 c. sugar until very pale yellow and about tripled in volume. ( A slight ribbon should fall from the beaters). Transfer mixture to a medium sized bowl. Step 2. Whip cream and the remaining 1/4 c. sugar until soft peaks form. Add Mascarpone and continue to whip until it creates a soft, spreadable mixture with medium peaks. Gently fold the Mascarpone mixture into the sweetened egg yolks until combined.
For the assembly:
1 3/4 c. good espresso or very strong coffee. 2 T. Rum 2 T. unsweetened cocoa powder 24 ladyfingers Bittersweet Chocolate shavings
Step 3. Combine espresso and Rum. Set aside. Step 4. Sift cocoa onto the bottom of a 8 x 8 pan. Step 5. Working one at a time, quickly dip ladyfingers in the coffee/rum mixture and place half of the lady fingers in the bottom of the pan. Cover with Mascarpone mixture. Repeat with remaining lady fingers and Mascarpone mixture. Step 6. Dust top layer with remaining cocoa powder. Add shaved chocolate. Step 7. Cover with plastic wrap and refrigerate at least 4 hours, 24 hours if possible.
