1 lb sweet potato
1/2 c butter (room temp)
1/2 c granulated sugar
1/2 c brown sugar
1/2 c whole milk
2 large eggs
2 tsp vanilla extract
2-3 tsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp salt
1 pinch of ground cloves
1 9 inch unbaked pie crust

Directions:
Directions:
wrap the sweet potato in foil, place on a cookie sheet and bake at 400º oven. until soft, about 45 minutes. Allow them to cool when done.

Skin the cooled sweet potatoes and place in a bowl. Heat oven to 350º.

Make the sweet potato pie filling by mashing the sweet potatoes and room temperature
butter together in a large bowl. Whisk in the sugars, milk, eggs, vanilla, spices and salt until well combined.

Pour the filling into a 9-inch unbaked pie crust. Bake for 50-60 minutes. You will know when your pie is done when a toothpick inserted into the center comes out clean. The pie will rise when baking and then deflate after it cools.
