1½ pounds whole baby potatoes
1 Tbsp olive oil
1-4 tsp kosher salt, depending on preference (see notes)
fresh herbs (thyme, rosemary or sage), optional

Wash and dry potatoes. Make sure they are dry so that skins get crispy.
Put potatoes in a bowl; drizzle with olive oil. Stir to coat skins with oil. Add salt; stir again.
Put potatoes in air fryer, making sure not to crowd basket. Set it for 400º; cook for 14 min. Halfway through pull basket out and shake to redistribute potatoes.
Test potatoes by inserting a fork into one of larger ones. They are done when fork goes in easily.
Cooking time will vary depending on what size your potatoes actually are. If they need more time cook them longer, testing every 3 min.
Toss with fresh herbs before serving if desired.


Notes: Amount of Salt
I like my baby potatoes salty and use 4 tsp of kosher salt for recipe. But you might want to reduce amount of salt. Additionally if using regular table salt only use 1-2 tsp on potatoes.
