1 med/small yellow squash
2 tsp olive oil
¼ tsp salt
½ tsp pepper
½ tsp garlic powder

Wash yellow squash; slice into rounds, ½" thick. Then cut the rounds into halves or quarters.
Put squash slices in a bowl. Drizzle oil over top; add salt, pepper & garlic powder.
Put in air fryer basket, being careful not to overcrowd. can fit 1½ - 2 med sized squash in 5.8 quart air fryer basket.
Air fry at 400º for 7 min. Check squash and make sure it isn't browning too much. The squash is done when it is brown on edges and not mushy in the middle.
put squash back in at 400º for another 3 min; a total of 10 min cooking time. But if you slice the squash more thinly it will cook more quickly. So check it after 7 min to be sure.


NOTE: This recipe will give you summer squash that is brown with crisp edges, but it won't be super crispy. To make really crispy squash you need to slice it thinner and add breading.
This recipe works with any summer squash, including zucchini, patty pan squash, crookneck squash and less common varieties like tatuma squash.
You can vary seasoning by using Italian seasoning, herbs de Provence or lemon pepper seasoning instead of the garlic powder.
