2 Cups Flour
½ Cup Sugar
2¼ tsp Baking Powder
1 tsp Salt
2 tsp Cinnamon
2Tbsp Butter, melted
2 Eggs
¾ Cup Milk
2 tsp Vanilla
2 Apples, peeled and diced small

1½ Cups Powdered Sugar, sifted
¼ tsp Vanilla
¼ Cup Milk

Directions:
Directions:
Sift together 1st 5 ingredients. Melt butter, then cool slightly and place in a separate bowl. Whisk in eggs then remaining ingredients. Add to flour mixture and stir until just combined. Heat oil about an inch deep in a frying pan until a wooden spoon dipped in forms bubbles. Drop batter by tablespoon into hot oil and fry until brown on one side then turn and fry on the other side. Place on wire rack for just a minute then dip both sides in the glaze made with the powdered sugar, vanilla and milk, then place back on a rack to cool.
*** These are best eaten the same day or they will get soggy.
Better still when eaten while still hot.
Makes about a dozen. Fry just a few at a time.
