1/2 lb ground beef
1/2 lb spicy italian sausage
1/2 lg white onion, chopped
3 garlic cloves
2 14 oz cans of fire roasted diced tomatoes (I use the italian seasoned)
1 24 oz jar of tomato sauce
4 c beef broth
2 T tomato paste
2 T Calabrian chilis (I use Trader Joes)
1/4 c heavy cream
1 t dried oregano
1 t dried parsley
3 c pasta (mafaldine)
Add salt and pepper to your liking
*I would also add approx 1 T sugar

3/4 c ricotta cheese
1/2 c shredded mozarella
1/4 c grated parm
Basil for garnish

Directions:
In a large soup pot heat olive oil over medium heat
Add your meat and saute until fully cooked through, remove from pan
Add white onion and saute for 5-6 min, add in your garlic and saute for another 2 mins.
Add diced tomatoes, jarred tomato sauce, beef broth, tomato paste, Calabrian chilis, cream, oregano and parsley.
Stir well to combine
Add meat back in
Bring soup to a light boil and add in pasta
Cover and cook through until pasta is al dente (about 15 mins)
While your pasta is cooking in the soup, mix the roccotta, mozz and Parm into a bowl and set aside
Test pasta for doneness
Serve in a bowl with a scoop of cheese mixture and basil
