.66 Lbs of lean cut beef

For marinade

1/2 cup light soy sauce
1/2 cup freshly squeezed orange juice
1 tablespoon brown sugar
2 garlic cloves, minced
1 teaspoon ground fresh ginger


Directions:
Directions:
Trim off any excess fat and silverskin from the beef
Place the beef in a zip lock bag and freeze fro about 2 hours until firm
Remove meat from freezer and cut 1/8 inch strips
In a bowl, combine all the ingredients for the marinade
Add the beef to the marinade and stir well to coat each slice
Cover and refrigerate for 6-8 hours
Take out the meat and drawn in in a colander
Place beef slices on a dehydrator tray.
Dry at 160-165 degrees Fahrenheit for 1 hour
Then reduce temperature to 155 degrees Fahrenheit and continue to dry until pliable, with no moisture pockets visible (about 5-7 hours)
Store in an airtight container in a dark, dry place
